This is soft, fluffy, moist, and not overly banana-y. You can make it pareve or dairy.
Ingredients
- 2 very ripe bananas, mashed
- ⅓ cup neutral oil (or ⅓ cup melted butter if making dairy)
- ⅓ cup brown sugar
- 2 tbsp maple syrup
- 2 eggs
- 1 tsp vanilla
- ¼ cup water (or milk if making dairy)
- 1¾ cups flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- ½ cup chocolate chips/chopped chocolate, plus more for the top
Directions
Preheat oven to 350°F.
Mash 2 bananas until smooth. Whisk in ⅓ cup oil, ⅓ cup brown sugar, and 2 tbsp maple syrup.
Add 2 eggs and 1 tsp vanilla and whisk really well until slightly light and foamy. Add ¼ cup water.
Add 1¾ cups flour, 1 tsp baking soda, ½ tsp baking powder, ½ tsp salt, and 1 tsp cinnamon. Gently fold just until combined — don’t overmix.
Fold in ½ cup chocolate (or more), pour into a greased/lined loaf pan, and sprinkle extra chocolate.
Bake at 350°F for about 48–55 minutes, until a toothpick comes out with moist crumbs rather than wet batter.
Pareve: oil and water
Dairy: melted butter and milk
