Ingredients
- 250 g pearl couscous
- Hot dogs, sliced
- Olive oil
- 3 fresh garlic cloves, pressed
- Or garlic powder, if you want the easy version
- 1 cup chicken broth
- 1 cup water
- Tomato paste, a small spoonful
- Paprika
- Cumin
- Onion powder
- Salt
- Black pepper
For the hot dogs
- Olive oil
- Salt
- Black pepper
Directions
- Heat a little olive oil in a pan.
- Add the sliced hot dogs and season with salt and black pepper.
- Sauté until browned and slightly crispy, then move them to the side or remove them from the pan.
- Add a little more olive oil to the same pan.
- Add the pressed garlic, a small spoonful of tomato paste, paprika, cumin, onion powder, salt, and pepper.
- Mix everything into the olive oil and cook for about 30–60 seconds, until fragrant and paste-like.
- Add the 250 g pearl couscous and stir so every piece gets coated in the seasoned mixture.
- Pour in 1 cup chicken broth and 1 cup water.
- Stir, bring to a boil, then lower the heat and cover.
- Cook for about 10–12 minutes, stirring occasionally, until the couscous is tender and most of the liquid is absorbed.
- Mix the browned hot dogs back in and cook together for another minute or two.
- Taste and add extra salt or pepper if needed.
- Serve with a salad, because you have to have something healthy.
