It doesn’t look like much, but trust me on this one.
Fresh, bright, simple, and way better than you’d expect.
For the bulgur
- 1 cup bulgur
- 1 cup boiling water
- Tiny drizzle of olive oil
- Pinch of salt
Place the bulgur in a bowl. Pour over the boiling water, add the olive oil and salt, cover, and set aside until all the water is absorbed.
Once ready, fluff with a fork (not a spoon!) and let cool slightly.
Meanwhile, finely mince
- 1 cucumber
- 1 tomato
- A little purple cabbage
- ¼ purple onion
- About ¼ cup cilantro
- 2 garlic cloves, grated
- Optional: a few mint leaves, finely minced
Add
- A drizzle of olive oil
- Juice of ½ a lemon
- Salt and pepper to taste
Mix the vegetables and dressing together, then fold into the fluffed bulgur.
The secret? Chop everything as tiny as possible. Trust me.
